Plant-rich diets are widely promoted as a solution to some of the greatest challenges of our time: improving human health while reducing environmental impact. While such dietary patterns are associated with lower risks of many chronic diseases, questions remain about their ability to support optimal micronutrient status across the life course. Are nutrients such as vitamin B12, vitamin D, iron, zinc, calcium, and iodine more difficult to obtain when animal-source foods are reduced? Who is at most risk of inadequacy, and what does the evidence actually tell us? This presentation will explore the science behind sustainable plant-rich diets and discuss strategies for achieving nutritional adequacy without compromising sustainability.
